I love the slow ritual: first the scent of cinnamon and star anise, then adding lime, chili and sprouts bit by bit. No hype, just a bowl that lets you decompress for a moment.
The broth simmers for 12 hours – and you taste it from the first spoonful. The Pho Bo (beef) has that deep, almost addictive complexity you usually only find in Hanoi. The Pho Ga (chicken) is lighter, clearer, perfect when you want something gentle. And yes, the vegan Pho with tofu or seitan holds its own.
The broth. Period. Everything else – noodles, meat, herbs – matters, but the broth is the soul. Ours is cooked overnight: beef bones, onions, ginger, star anise, cinnamon, cardamom. No shortcuts, no bouillon cubes.
Pho comes with a plate of sides: bean sprouts, Thai basil, lime wedges, chili. Throw it all in by feel. Sprouts first (they cook slightly in the hot broth), then herbs, then squeeze the lime and add Sriracha to taste. Slurping is allowed – encouraged, even.
